Sweet Potato Spiral (GF)
Sweet potato spirals are a simple, elegant side dish that balances comfort with restraint. Thinly sliced sweet potatoes are cut, tossed with olive oil and fresh rosemary, then roasted until tender inside with lightly crisped edges. The natural sweetness of the potato pairs beautifully with the earthy aroma of rosemary, creating a dish that feels both familiar and quietly refined.

Ingredients
3 - 4 Sweet potatoes, select similar sized, longer and thinner
3 T. Avocado oil (or olive oil)
3 T. Butter, melted
1 T. Rosemary, minced (fresh is best, but dried is ok)
1 T. Lemon zest
Salt & Pepper to taste
1/4 C. Candied Pecans (optional)

Step 1 — Preheat the Oven
Preheat the oven to 375°F (190°C).
Step 2 — Slice and Season
Using a mandoline, slice the sweet potatoes into even rounds and transfer them to a large bowl. Add the olive oil, melted butter, lemon zest, rosemary, kosher salt, and freshly ground black pepper. Toss gently until all slices are evenly coated.
Step 3 — Arrange the Skillet
Working with about 10–12 slices at a time, stack the sweet potatoes into a loose row and place along the outer edge of a cast-iron skillet. Continue working inward, arranging the slices in a spiral and packing them loosely so heat can circulate and cook the centers evenly.
Step 4 — Roast
Transfer the skillet to the oven and roast, uncovered, for about 45 minutes, or until the centers are tender and the edges are lightly golden.
Chef’s Note:
For extra caramelization, brush the top lightly with melted butter during the final 10 minutes of roasting.
Step 5 — Finish and Serve
Scatter chopped candied pecans over the top and serve warm.
