Nobu Inspired Spinach Salad

I'm obsessed with this salad - it's earthy, healthy, and easy to make.

Serves 2

Ingredients

  • 2/3 C. Leeks - washed & julienned

  • 10 oz Baby Spinach

  • 2 T EVOO

  • 2 t Truffle Oil

  • 1 t Yuzu Juice

  • 2 T Shaved Parmesan Cheese

  • Ground Black Pepper

  • Dried Miso

  • 1 Avocado

Deep fry the leeks until crisp.

In a bowl, dress the spinach with the olive oil, truffle oil, yuzu juice, Parmesan and pepper.

Add the dried miso just at the end so it stays crispy.  Plate with leeks, cheese & avocado.

 

Chef's Tip:

Adding grilled salmon, scallops or shrimp is an easy upgrade to entree.
