Steak au Poivre
Step 1
• Bring the steaks to room temperature (30 minutes)
• Grind 2 T. black peppercorns in a mortal & pestle
• Press peppercorns into both sides of steak & salt generously.
Step 2
• In skillet, bring 2 T. butter & 2 T. olive oil on medium-high heat until butter is foaming.
• Sear steaks on both sides to desired temperature
• Remove and rest
• Deglaze the pan with 2 T. Cognac, scraping the fond
• Add 1 C. heavy cream & 1 T. Dijon mustard, whisk well
• Allow to reduce, serve with steak
