Chicken Piccata (GF)

A crisp parmesan crust with a bright lemon-caper pan sauce.

Ingredients

4 boneless, skinless chicken breasts

Kosher salt

freshly ground black pepper

¾ C. gluten-free flour

½ C. finely grated Parmigiano Reggiano

2 large eggs

2 T. water

3 T. unsalted butter, divided

2 T. olive oil

½ C. dry white wine

¾ C. chicken stock

¼ C. fresh lemon juice

Zest from 1 lemon

4 T. capers, drained

1 T. caper brine (optional)

2 T. fresh parsley, finely chopped

A reliable boning knife is essential for trimming and shaping chicken cleanly. A well-balanced blade gives you control without tearing the meat.


A microplane zester creates fine, feather-light shavings that release bright citrus oils, delicate garlic, fresh ginger, and hard cheeses with exceptional control. Preparation

Step 1 — Prepare the Chicken

Place chicken between parchment and pound to an even ½-inch thickness. Season well.


Step 2 — Build the Crust

Combine gluten-free flour and parmesan in one dish.

Whisk eggs with water in another.

Dredge lightly → egg wash → return to flour mixture.

Press gently for a thin, even crust.


Step 3 — Sauté the Chicken

Heat olive oil and 1 tablespoon butter in a large sauté pan.

Cook 3–4 minutes per side until golden.

Work in batches. Do not crowd the pan.

Transfer to rack or sheet pan.


Chef's Note:

For larger groups, hold chicken on a wire rack over a baking sheet in a 200°F oven.

This keeps the crust intact while you finish batches and build the sauce.


Step 4 — Build the Sauce

Remove excess fat. Deglaze with white wine. Reduce by half.

Add chicken stock and simmer 3–4 minutes.

Add lemon juice, zest, capers, and caper brine.


Step 5 — Finish the Sauce

Reduce heat. Whisk in remaining butter.

Do not boil—this keeps the sauce smooth and emulsified.


Step 6 — Return & Serve

Return chicken briefly to coat or plate and spoon sauce over.

Finish with parsley.
