2 C. Gluten-free flour

1/4 C. Sugar

1/2 t t. Kosher salt

1/2 Lbs. Very cold unsalted butter, diced

For the Filling

1.5 Lbs. McIntosh, Macoun, or Empire apples

1/4 t. Grated orange zest

1/4 C, Gluten-free flour

1/4 C. Sugar

1/4 t. Kosher salt

1/4 t. Cinnamon, ground

1/8 t. Allspice, ground

4 T. Cold unsalted butter (1/2 stick), diced

Preparation

Step 1 — Prepare the Pastry Dough

In the bowl of a food processor, combine flour, sugar, and salt. Pulse briefly to blend. Add the cold butter and pulse 12–15 times, until the butter resembles pea-size pieces.


With the processor running, add 4 tablespoons ice water through the feed tube. Pulse just until the dough begins to come together — do not overmix. Turn the dough onto a lightly floured surface and gently form into two disks. Wrap tightly and refrigerate one disk for at least 1 hour (reserve the second disk for another use).


Step 2 — Prepare the Filling

Preheat the oven to 450°F and line a baking sheet with parchment paper.


Peel, core, and quarter the apples, then cut each quarter into chunky slices. In a mixing bowl, combine flour, sugar, salt, cinnamon, and allspice. Cut in the butter using your fingertips until the mixture becomes crumbly and begins to clump lightly. Toss the apples with the crumb mixture and orange zest until evenly coated.


Step 3 — Roll and Assemble

Roll the chilled dough into an 11-inch circle on a lightly floured surface and transfer to the prepared baking sheet. Spoon the apple filling into the center, leaving a 1½-inch border. Fold the edges of the pastry over the apples, pleating naturally to form a rustic circle. Sprinkle the pastry edges lightly with sugar and, if desired, scatter sliced almonds or chopped pecans over the filling.


Step 4 — Bake the Crostata

Bake for 20–25 minutes, until the crust is golden and the apples are tender and lightly caramelized. Allow the crostata to rest for 5 minutes, then carefully transfer to a wire rack using two wide spatulas. Serve warm or at room temperature with softly whipped cream, crème fraîche, or vanilla ice cream.
